Gluten and Dairy Free Banana Chocolate Nut Cookies

4 ripe bananas
1/2 C virgin coconut oil (melted) or other healthy oil such as walnut
1/2 C either maple syrup or agave syrup
1 t vanilla extract or 1/2 t almond extract
1/3 C soy or any alternative milk or 2 eggs

2 C GF rolled oats (not quick) such as Bob’s
1&1/4 C brown rice flour (I like Authentic Foods brown rice flour best)
2T Flax meal
1t baking soda

1 C shredded unsweetened dried coconut
1/4 C cacao powder (available in health food stores, this is optional)
1/4 C chopped dried cherries or raisins
1/4 C chopped nuts of your choice (I like pecans with this)
1/4-1/2 C GF/DF chocolate chips

Soften bananas in mixer.
Add in sweetener and oil.
Add in alternative milk or eggs and extract
Mix in the oats, flour, flax and baking soda

Then simply add in the other ingredients, any of which can be omitted.

Drop rounded spoonfuls on parchment paper or greased cookie sheet and bake at 350 for 12 minutes.
