This has become my all-time favorite GF/DF treat. Think really good fudge. Even if you never liked fudge. Made with organic coconut manna, coconut oil, cacao, vanilla, maple syrup, a pinch of salt, and cacao nibs. That’s it. While coconut oil is a saturated fat, it’s a medium chain triglyceride which burns more efficiently. 1/2 C coconut cream, warmed so it’s not solid (If you can find a brand that does not have additives, use that.)
1/2 C Nutiva coconut manna. Make sure warm it (best in a small pan with water over low heat) and then stir it up as it tends to separate.
1 C organic cacao powder
3/4 C organic grade B maple syrup (also warmed gently) You can also add 1/4 C of coffee for extra flavor.
2 T vanilla
a pinch of flaky sea salt (or good quality Kosher salt)
1/4 C raw cacao nibs or toasted almond slivers
Mix all ingredients, except nibs and salt, in a food processor. Do not over-mix or it will seize up. Pour into a lightly greased glass pan, roughly 8X8, and top with nibs (or chopped nuts) and a pinch of salt. Put into refrigerator for at least 1 hour. This does need to be stored in the refrigerator. I don’t really want to know how many calories one small square has—that would potentially ruin my enjoyment. And most days, I do only have one small square. Excellent with a cup of coffee.
