Those of you who have celiacs or a gluten intolerance know that carbohydrate options for holding our nut butters or meats are rather lacking. My expectations are raised each time a new mix or pre-made loaf hits the grocery store – only to feel it plummet once I taste it. Not this time. I grabbed a loaf of Three Bakers 7 Ancient grains last week. It’s gluten, dairy, and soy free. Because it contains amaranth, hemp, quinoa, teff, sorghum, flax and millet, the consistency is fabulous and it provides some calcium and iron. While it still has a bit of that gummy mouth feel (due to the addition of xanthum gum), it actually made a great sandwich. Even better toasted, as is the case with most GF breads.
